The humble sausage can be fierce when it comes to the barbecue, so turn up the heat with some of our Mexican inspired hot dogs. Yeee Haaa.
- 2 bacon rashers
- 1 Texas hot link / sausage (see below)
- 1 hot dog bun
- 1 slice Cheddar
- half a tomato
- half an avocado
- finely chopped fresh coriander and white onion
- 50g/2oz/scant a quarter cup of mayonnaise
- 2 tsp green Tabasco or other chilli sauce
Wrap the bacon around the sausage and barbecue. Line the bun with a slice of cheese and add the sausage. Stuff thin slices of tomato and avocado next to the sausage, sprinkle over some chopped coriander and onion and, finally, drizzle over the mayonnaise that you have mixed with chilli sauce. Serve to someone who has proved themselves worthy, with shoestring fries.
