     3 tbsp Groundnut oil
     1 Large onion, finely chopped
     2 tsp Cumin seeds
     1 tsp Salt
     1 tbsp Turmeric
     2 Fresh chillies, sliced thinly (reserve a few slices for garnish)
     2 Garlic cloves, chopped
     250 g Red split lentils
     1 Vegetable stock
     1 tsp Dried mint
     2 Limes, zest and juice
     1 Lemon, zest and juice
    For the dressing:
     2 tbsp Olive oil
     0.50 tsp Cumin seeds
     1 Garlic clove, finely sliced
     0.25 tsp Cayenne pepper
     1 tbsp Fresh coriander leaves
     Serve with rice, nan bread or chappati.
