BLT & Onion Crustless Quiche

Enjoy the perfect picnic treat with this BLT Onion Crustless Quiche. This dish combines smoky bacon, juicy tomatoes, vibrant spinach, and caramelized onions in a fluffy egg base, all without needing a crust

Ingredients
- 8 rashers of streaky bacon
- 6 eggs
- 100g cheddar cheese
- 180g baby spinich
- 1 spring onion, finely chopped
- ½ jar Opies mini silver skin onions
- 100g cherry tomatoes
Method
- Preheat the oven to 180°C.
- Chop the bacon rashers into small pieces and add to a non-stick frying pan, heat on a medium high and cook until dark and crisp, stirring occasionally.
- As the bacon cooks, beat six eggs in a mixing bowl. Grate ¾ of your cheese into the egg, add half the cocktail onions and mix well. Season with salt and pepper. Chop the tomatoes into halves and put to one side.
- Take the bacon off the heat and place the spinach on top, place a lid over the top to let the residual heat wilt the spinach. Once wilted, stir the bacon and spinach into the egg mixture.
- Spray a tart tin, or 8-inch non-stick cake tin with cooking spray, and pour in the egg mixture. Scatter over the rest of the onions and tomatoes. Place in the oven and bake for 30 minutes until golden. Remove from the oven and serve hot or cold with the spring onion scattered.
