If there is one thing you would never expect to be able to eat as a vegan it is meringue. This vegan meringue recipe is simple, cheap and tasty.
1Preheat the oven to 120°C
2Drain a can of chickpeas into a large mixing bowl (it will expand!)
3Add 1 tsp of cream of tartar
4Using an electric whisk, beat the mixture for 10-12 minutes until it is holding soft peaks
5Whilst mixing, gradually add the sugar one tablespoon at a time until the mixture holds stiff peaks
6Drop large spoonfuls onto baking paper lined trays and place in the oven for an hour. Check that your meringues are firm to touch and not tacky otherwise add 10 minutes to the cooking time.
7When cooked, turn the oven off and leave in to cool.
8serve with fruit
