Sweet Potato and Cinnamon Muffins

    2 Eggs

    180 g Sugar

    250 g Cooked sweet potato, mashed

    80 ml Vegetable oil

    50 ml Water

    200 g Self-raising flour

    3/4 tsp Ground cinnamon


    1Preheat the oven to 180°C and line a muffin tin with paper cases.

    2In a large bowl beat the eggs with the sugar

    3Add the oil and water and mix well.

    4Sieve the flour and cinnamon together before adding to the egg mixture.

    5Fold everything together before adding the sweet potatoes.

    6Pour into the muffin case filling them about 3/4 full.

    7Bake in the preheated oven for 20-25 minutes or until muffins are cooked.
