The ultimate comfort food. This recipe for a slow cooker corned beef hash can be cobbled together in the morning left all day and then when you return home in the evening you will be greeted by a warm and delicious hug. It's dead easy to make too :-)

This recipe is great for using up food in the fridge, feel free to experiment. If you have any other meat that needs using you can stick that in as well. To make a vegetarian version the corned beef can be replaced with Quorn mince and replace the beef stock cubes with veg stock cubes.

Ingredients

1 tin corned beef diced

4/5 potatoes diced

1 large onion finely chopped

1 carrot sliced

200 g baked beans

2 beef stock cubes

1 1/2 pints boiling water

Directions

1If your slow cooker has a removable bowl, take it out. If not you can cook this recipe straight in the slow cooker.

2Layer the corned beef, onion, baked beans and potatoes on top of each other. Add seasoning if you wish.

3Mix the stock cubes with hot water. Pour the stock over the ingredients so it just covers everything.

4If you removed the bowl put it back in the slow cooker and cook on high for 4 hours or low for 7-8 hours.

5If you want to make the sauce thicker, add a sprinkling of gravy granules.

6Serve hot with veg or pickled red cabbage. Also great with good old bread and butter if you want to go for the full comfort food effect!

Can I just ask please is this recipe based on diced beef or actual tins of corned beef, the cheap stuff? Thanks, just a bit unsure.

I live in a beautiful country apartment complex and am going to put this recipe in our monthly newsletter for January as it looks easy for residents who have slow cookers. My query is you mention baked beans without stating whether it is one tin of baked beans. If it was me I would put one 250g tin of beans into the slow cooker. Might be useful to adjust your ingredients list…

I use a pkt of French runner beans instead of the baked beans. And I added a stock cube for extra flavour.

Hi Angie, you don’t need to cook the potatoes beforehand. You can just throw them in raw and uncooked, they’ll be thoroughly cooked by the time you take them out of the slow cooker. 🙂

Hi Carolann, thanks for pointing this out. We’ve updated the recipe. You can add the beans at the same time as the beef etc or pop them in heated at the end, before serving.
