Low Sugar Ginger Slice

Whether it’s gingerbread men or German Lebkuchen, ginger is an essential flavour of Christmas. These simple Ginger Slices are virtually sugar free and are deliciously soft and gooey. Pop them in a tin and give them as a thoughtful homemade gift…or keep them all to yourself!

  • Yields: Makes 9 slices


75g unsalted butter

130g xylitol sugar alternative (available in supermarkets and health stores as Total Sweet)

4 large eggs

1 tsp ground ginger

1 ½ tsp mixed spice

170g ground almonds (processed to make finer if not already extra fine)

1 ½ tsp of baking powder

1 tsp vanilla extract


1Oven on to 180oC or 160oC fan

2Line an 8 inch square tin/brownie tin

3Melt the butter in a bowl in the microwave (or other) and add the xylitol and whisk to combine

4Spoon into a stand mixer with a whisk attachment

5Add the eggs one at a time while whisking slowly

6Add the almonds, baking powder, spices and vanilla and mix until smooth

7Use a spatula to ensure all the mixture has been taken down from the sides of the bowl

8Pour into the lined cake tin

9Bake for 20 mins

10Carefully cover with foil and continue to bake for 10 mins

11Remove from the oven and allow to cool in the tin for 20 mins and then remove and leave to cool on a wire rack

12Slice into 9 pieces

13This cake can be frozen or kept in an airtight container for 3 days
