    Dairy free ice cream recipe

    Ingredients

    160 ml aquafaba

    1/4 tsp cream of tartar

    120 g icing sugar

    8 - 10 strawberries, pureed

    1/2 tsp strawberry essence

    Directions

    Prepare the aquafaba first

    1Reduce the aquafaba over a medium heat until it thickens up like egg whites then chill before beginning.

    To make the vegan ice cream

    1Whip the chilled aquafaba and cream of tartar for 10 - 15 minutes until it's thick and creamy.

    2Gradually pour in the icing sugar whilst continuously whisking.

    3Add the strawberry puree and strawberry essence and combine well.

    4Transfer to a freezer safe container and freeze for two hours.

    Use an ice cream maker to get a better result. Take the ice cream out of the freezer for about 10-15 minutes beore serving.
