    Bacon avocado eggs

    Sometimes, you want a light, refreshing breakfast of oats and berries, and sometimes, you want a soft-boiled egg, placed inside an avocado, wrapped in a blanket of bacon. One might justify making our recipe by reminding themselves that avocado is the good kind of fat. As for the bacon, well you can’t win ’em all… Prepare to pig out.



    Medium eggs (1 egg for each avocado)

    Large, just ripe avocados

    Slices of smoked streaky bacon (about 8 slices for each avocado)

    Sunflower oil, for pan frying


    1Drop your eggs into a pan of simmering water and cook for exactly 6 minutes. Carefully lift out and place in a bowl of iced water to cool.

    2Peel your eggs and set aside.

    3Cut your avocados in half and remove the skin in one fell swoop. Take out the stone using a knife. Further scoop out the cavity so it will snugly fit your egg.

    4Pop your egg in and place the other half of the avocado over the egg.

    5Stretch the individual slices of bacon with the back of a knife - this will reduce shrinkage. Lay them next to each other, slightly overlapping, on a chopping board.

    6Roll your re-sealed avocado in the row of bacon slices - the row should be as wide as your avocado. Wrap two more slices around the avocado in the opposite direction to seal the avocado entirely.

    7Heat some oil in a skillet/frying pan. Fry the parcels in the pan for 10 minutes or so, turning constantly. Make sure to begin the frying with the loose ends of the bacon facing down as this will fix them in place.

    8Get stuck in!
